Description
This is a Pigato of incredible complexity. It is traditionally vinified with a limited contact between its must and its marc (just a few hours) and at a controlled temperature of 20°C (68°F), so as to preserve the typical features of this variety.
Sensory analysis
Intense straw yellow color with tiny golden hues. On the nose, nice scents of ripe yellow plum and balsamic hints of sage and wood resin. On the palate, its important roundness and structure are supported by a pleasant freshness.
I’Garage recommends
It pairs beautifully with pastas, risottos and soups. Superb with Ligurian pesto pasta!
